Lime Marmalade Citrus Pie

1 ½ cups vanilla wafer crumbs
3 T granulated sugar
2 tsp lime zest
5 T melted butter

1 (8-oz) package cream cheese
2 T granulated sugar
1 T lime Jell-O
1 (14-oz) can sweetened condensed milk
3 egg yolks plus 1 egg
2 tsp lime zest
½ cup key lime juice
1 jar (16-oz) lime marmalade

1 1/3 cups heavy whipping cream
1/3 cup powdered sugar
Toasted coconut
Lime slices



Combine vanilla wafer crumbs, sugar and lime zest; add melted butter. Press into a 9-inch pie dish. Bake at 350 degrees for 8-10 minutes. Cool before filling.

In a large bowl, beat cream cheese, sugar and Jell-O until light and fluffy. Add condensed milk, beating until combined. Add egg yolks and egg, lime zest and lime juice until combined. Stir in lime marmalade. Pour into cooled crust. Bake at 350 degrees for 30-35 minutes or until pie is set. Refrigerate until well set before topping.

In a cold large bowl, beat cream until soft peaks form. Add powdered sugar and continue beating until stiff peaks form. Pipe topping over set pie. Sprinkle with toasted coconut and garnish with lime slices.
