Almost a Mimosa Breezy Orange Pie

Ingredients

Crust Ingredients:
1 3/4 cup finely crushed honey graham crackers
1/4 cup sugar
6 tablespoons butter, melted

Coconut-pineapple layer ingredients:
1/2 cup pineapple juice
1 teaspoon unflavored gelatin
8 ounces cream cheese, softened
2/3 cup grated coconut in heavy syrup, mostly drained

Orange layer ingredients:
2/3 cup orange juice
2 1/4 teaspoons unflavored gelatin
3/4 cup heavy whipping cream
1 cup powdered sugar
1/2 teaspoon grated orange zest
1/2 teaspoon orange extract
1/2 teaspoon vanilla extract
2 (15 oz.) cans mandarin oranges, well drained, chopped, squeezed lightly to drain liquid

Topping ingredients:
Sweetened whipped cream
1 cup mandarin oranges, very well drained, do not chop
Toasted coconut flakes

Directions

Crust Ingredients:
Preheat oven to 375 F. In a large bowl, combine cracker crumbs, sugar, and butter until well combined. Press mixture onto bottom and up the sides of pie plate. Bake 8-10 minutes. Let cool.

Coconut-pineapple layer ingredients:
In a small bowl, add pineapple juice. Sprinkle gelatin over juice; let sit 5 minutes. Microwave gelatin mixture about 15 seconds, or until dissolved completely. In a large bowl, beat cream cheese until fluffy. Very slowly add pineapple-gelatin mixture. Stir in coconut. Pour filling into pie crust. Refrigerate 2-3 hours or until set.

Orange layer ingredients:

In a small bowl, add orange juice. Sprinkle gelatin over juice; let sit 5 minutes. Microwave gelatin mixture about 30 seconds, or until completely dissolved. Set aside to cool. In a large bowl, add whipping cream; beat until stiff peaks form. Fold in powdered sugar. In a large bowl, combine orange-gelatin mixture, orange zest, orange and vanilla extract, and mandarin oranges. Fold orange mixture into whipped cream. Spread orange filling over coconut-pineapple layer. Refrigerate 2-3 hours or until set.

Topping ingredients:
Pipe whipped cream around edge of set pie. Arrange mandarin oranges in center. Sprinkle coconut over whipped cream. This pie will need to firm up for at least 6 hours or overnight.
