Wilderness Strawberry Schaum Torte Pie

Meringue Crust:
3 Egg Whites
¼ tsp Cream of Tartar
1 Cup Sugar
1 tsp. vanilla extract

1 can Wilderness Strawberry Pie Filling (21 oz. can)
2 tsp. Strawberry Jello

Cream Cheese Filling :
1 cup heavy Whipping Cream
½ cup Powdered Sugar
1 – 8 oz. pkg. of Cream Cheese, softened
1 tsp. Almond Extract
1 TBS Lemon Juice

Filling 2
1 cup Semi-sweet Chocolate Chips

1 quart fresh Strawberries


Meringue Crust:
In a mixing bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Add vanilla extract. Gradually beat in sugar, 1 TBS. at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread onto the bottom and up the sides of a greased 10 inch deep-dish pie plate. Bake at 350 degrees for 25-30 minutes or until meringue is lightly browned. Cool on a wire rack.

Stir the strawberry Jello into the strawberry Pie filling and cook over medium heat until the Jello is all dissolved. Cool the Wilderness strawberry filling completely and spread over the cooled meringue crust. Chill in the refrigerator until completely set.

Cream Cheese Filling :
Beat the heavy whipping cream until soft peaks form. Add the powdered sugar and beat until still peaks form. Add the softened cream cheese, almond extract and lemon juice. Beat until the cream/cream cheese mixture is smooth and creamy. Take half the mixture and spread over the strawberry filling layer. Refrigerate the pie until set.

Filling 2
Melt the chocolate chips in the microwave (watching carefully so they don’t burn). Cool completely and fold into the remaining half of the cream/cream cheese filling mixture until it is thoroughly mixed. Carefully spread this over the first cream cheese mixture on the pie to form the second layer.

Wash the strawberries and cut them in half. Dry completely and place on top of the chocolate cream cheese layer. You can garnish the strawberries with white chocolate, semi-sweet chocolate and sliced almonds if desired.
