Triple Mango Madness Pie

1 sleeve Maria Cookies (7 oz)
7 Tb unsalted butter, melted
2 Tb sugar
Mango Filling
1 1/4 cup mango puree
5 egg yolks
1 can sweetened condensed milk
2 Tb lemon juice
Pinch of salt
Mango Fluffy Layer
1/4 cup confectioner sugar
1 tsp Clear Jel (instant)
8 oz cream cheese (room temp)
3/4 cup confectioner sugar
1 1/4 cup heavy cream
4 tsp mango flavoring
Top Layer
4 mangos (peeled, pitted, and sliced thin)


Place cookies into food processor and blend till the texture of sand. Add butter and blend till combined.  Pour into pie pan and tamp down the bottom and side. Bake at 350 degrees for 20 minutes. Cool thoroughly.
Mango Filling
In a bowl, add mango puree, egg yolks, sweetened condensed milk, lemon juice, and salt. Whisk until combined. Pour into cooled cookie crust. Bake at 325 degrees for 30 min. Cover with plastic wrap and chill completely.
Mango Fluff Layer 
Add Clear-Jel to 1/4 cup confectioner sugar in a small bowl and mix together. 
In a stand mixing bowl, whisk heavy cream until soft peak. Add Clear-Jel confectioner sugar and whisk until stiff peak.
In another stand mixing bowl, whisk cream cheese till smooth. Add confectioner’s sugar and mango flavoring. Whisk until incorporated. 
Gently fold whipped cream mixture into cream cheese mixture. Layer on top of chilled mango filling.
Once completely chilled, layer fresh mango slices on top concentrically giving a rose effect.
