Sweet Corn Pie

Ingredients

Crust Ingredients:

3/4 cup shortening

2 1/4 cups flour

3/4 tsp salt

3/4 cup ice water

Filling Ingredients:

1/2 cup corn meal

3 eggs

1 cup cottage cheese

2 tablespoons white sugar

4 tablespoons melted butter

1 cup whole kernel corn

1/4 cup heavy cream

1 teaspoon salt

Directions

Combine shortening, flour and salt until course crumbs. Add the water 2 tablespoons at a time until dough combines into a ball. Roll out on a floured surface. Place in pie dish. Place a piece of parchment paper and pie weights in crust and bake for 20-30 miountes or untol crust is completely baked. Cover edges with foil if needed to prevent burning. Remove fcrom oven and set aside. reduce oven temp to 350 degrees.

Combine filling ingredients and pour into pie shell. Bake in 350 degree oven for 30 minutes.
