Ingredients
Crust
2 cups peanut butter sandwich cookies, crushed
2 Tablespoons sugar
6 Tablespoons melted butter
Ganache
4 oz. dark chocolate, chopped
½ cup heavy cream
Filling
1 cup butter, softened
1 ½ cups sugar
1 cup creamy peanut butter
4 pasteurized eggs
1 teaspoon vanilla
Directions
Crust
Combine ingredients and line bottom and sides of pie plate. Bake at 350 degrees for 8-10 minutes. Set aside to cool.
Ganache
Place chocolate in a medium sized bowl. In small saucepan, heat heavy cream until hot. Pour over chocolate and stir until smooth. Spread this mixture in the bottom of the pie crust and refrigerate to chill.
Filling
In a mixer bowl, beat butter and sugar together until light and fluffy. Add peanut butter and mix until combined. Add eggs, one at a time, beating for about 5 minutes after each one. Pour mixture into pie shell and refrigerate. Garnish pie with fresh whipped cream, chopped honey roasted peanuts and peanut butter cup candies.
