Ingredients
Pan 9-10 inch.
Serves 8.
Crust
1.5 c. graham cracker crumbs
6 T. melted butter
3 T. sugar
Key Lime Layer
¾ C. Key Lime Juice
2 cans sweetened condensed milk
1 pasteurized egg
2 pasteurized egg yolks
Directions
Crust
Mix graham cracker crumbs and sugar, add the melted butter and press into a 9-10 inch pie plate. You may not use all of it if you use a shallow pan. Bake at 350 for 8-12 minutes. Cool.
Key Lime Layer
Mix all ingredients, pour into cool crust, bake for 15-20 minutes in 375 degree oven.
Cool pie, then chill pie.
Spread 2/3 cup raspberry-blueberry (Sylt Hallon & Blaber) preserves/jam on top of pie. Chill.
Top with favorite whipped cream topping, lime zest, raspberries and blueberries, and/or cracker crumbs, if desired. Decorate pie as desired.
Chill and serve.
