Piper’s Strawberry Chocolate Hoedown Pie

Use a 9 inch pie pan. This pie serve eight people

Better For You Crust Ingredients
Eight Sheets of Graham Cracker Crumbs (about one cup)
Half of a cup pecans (put in food processor and make fine pieces)
Half of a cup oats (put in a food processor and make fine pieces)
5 T. Coconut Oil or Butter (melted)
3. T Sugar

Philadelphia Silk Ingredients
8 oz. Philadelphia Cream Cheese- Low Fat or regular
One Half Cup Confectioners€™ Sugar
One half teaspoon clear vanilla extract
8 oz. Cool Whip €“ Fat free works great

Chocolate Silk Ingredients
4 oz. semisweet or bitter baking chocolate- (Melted)
One and a half cups sugar (pulse ten times in a food processor)
2 sticks of butter
One teaspoon of vanilla extract
Four whole eggs- (I used pasteurized eggs)

Strawberry Ingredients
22 oz Frozen Strawberries in Syrup- Thawed
One quart fresh strawberries €“ cut into pieces and let dry
4-6 tablespoons of corn starch (use more if the fresh berries are juicy)


In a large bowl, mix the graham crackers and sugar. Add the pecans and oats. Then, mix in the melted coconut oil until everything is coated well. Press into a pie pan and chill for 15 minutes. Bake at 350 for 10 minutes. Place on cooling rack and let cool to room temperature.

Philadelphia Silk Ingredients
In a large bowl, mix the cream cheese, sugar, and clear vanilla until smooth. Fold in the Cool Whip. Spread a thin layer (around a third of an inch) on bottom of cooled crust. Place in fridge. More of this layer is used later.

Chocolate Silk Ingredients
In a mixer, cream the butter and sugar. Slowly add the chocolate and vanilla. Scrape the sides of the bowl and beat until fully mixed and fluffy. Beat for 20 minutes at a medium high speed adding four eggs (works best if they are cold) €“ one every five minutes. Either place the chocolate wafer pieces in the pie pan, and top with half of the chocolate silk, or mix the chocolate pieces into half of the chocolate silk and spread into pie crust.

Cover with a layer of Philadelphia Silk, leaving some room to add strawberries.

Strawberry Ingredients
Drain juice from frozen strawberries and place in a pot. Remove one quarter of a cup of juice and add to the corn starch to make a thick paste. Once you have a smooth paste, stir the paste into the rest of the juice and cook over medium heat. Once the juice begins to boil, stir it over the heat for another minute or two until it gets thick. Remove this from heat and let it cool down a bit, and then fold in the fresh strawberries. Chill. After it is chilled, place as many of the strawberries in the pie pan as it will hold.

Top with favorite whipping cream. Decorate as desired.
