Larry’s Coast to Coast Apple Pie

Ingredients

Crust:
1 1/2 C. Graham Cracker Crumbs
3 T Sugar
5-6 T Butter, Melted

Cream Cheese Layer:
8 oz cream cheese
8oz cool whip
1/2 cup powdered sugar
Beat cream cheese and sugar until smooth. Fold in Cool Whip.

Caramel and Toasted Nuts:
15 individually wrapped caramels 2 T. milk 1/3 c. toasted nut (pecan, walnut, peanut, etc) pieces

Apple Layer:
7-8 Cups apple (slice or pieces) (prefer a mix of sweet and tart apples)
3 T. Butter
2/3 C. brown sugar
3 T. corn starch
1-2 t. cinnamon
1/3 C frozen apple juice concentrate

Whipped Cream:
4 oz white chocolate
2.5 C cream

OPTIONAL:
Top with favorite whipped topping, caramel sauce, and/or nuts, as desired.

Directions

NOTE: Make Apple Layer first.

Crust
Mix crumbs, sugar, and butter together. Press mixture into pie pan. Bake at 375 degrees for 8-10 minutes or until light to med. brown.

Cream Cheese Layer
Beat cream cheese and sugar until smooth. Fold in Cool Whip. Spread on cooled pie crust.

Caramel, Nuts
Melt caramels with milk. Add toasted nut pieces (and optional feuilletine) and swirl into cream cheese.

Apple Layer
Place all ingredients in a covered baking dish at 350 degrees for 30 minutes. Gently stir and check to see if apples are softened. Continue to bake, checking every 5 minutes. Bake until apples are softened. Cool and chill. Spread on the chilled cream later.

Chill Pie

PIE TOPPINGS:
Whipped Cream
4 oz white chocolate
2.5 C cream

Heat one cup of cream and the white chocolate until chocolate is melted. Cool and chill overnight or until very cold.
Whip 1.5 cups of cream to soft peaks, add white chocolate, and beat until stiff peaks. Top Pie.
Top/decorate with favorite whipped topping, sauce,caramel, feuilletine, and/or nuts, as desired.
