Ingredients

Crust
6 oz graham cracker crumbs
3 oz melted salted butter
2 tbsp sugar

Filling
14 oz sweetened condensed milk
2/3 cup key lime juice
3 egg yolks

Topping
2 oz cream cheese, softened
1/4 tsp sea salt
4 oz white chocolate
4 oz heavy cream

Directions

Crust
Combine graham cracker crumbs and sugar.
Add melted butter and stir until well combined.
Press into 9″ pie tin. Chill.
Preheat oven to 350 degrees.

Filling
Whisk together condensed milk, lime juice, and egg yolks.
Topping
Heat cream until steaming.
Pour cream over white chocolate and whisk until all chocolate is melted and well combined. Allow to cool completely. Chill overnight.
Whip together cream cheese and salt.
Add white chocolate ganache.
Whip mixture until firm peaks form.

Assembly
Pour filling mixture into pressed crust.
Bake at 350 for 20 minutes.
Center should wobble.
Once cooled, top with whipped chocolate and garnish with lime.
