Ingredients
Crust:
1 1/2 C. Spiced Cookies crumbs (like ginger snaps or Bishoff)
3 T Sugar
4-6 T Butter, Melted (enough to make a crust that is like wet sand before baking)
Topping and Mix In:
1 1/2 C. Spiced Cookies crumbs
3 T Sugar
6 T Butter, Melted
Cream Cheese Layer
8 oz cream cheese
8oz cool whip
1/2 cup powdered sugar
Mango Layer
6 Cups Mango pieces
3-4 T Corn Starch
½ C Sugar
¼ t. Salt
1/8 t. Allspice
½ t. Cinnamon
¼ t. Nutmeg
1/8 t. Ginger Powder
1 T. Lemon Juice
Whipped Cream
2 oz white chocolate
2 C cream
Directions
Topping:
Mix crumbs, sugar, and butter together. Spread mixture on baking sheet. Bake at 375 degrees for 8-10 minutes or until crispy. Remove and let cool. Break into pieces and place in an airtight container.
Crust:
Mix crumbs, sugar, and butter together. Press mixture into pie pan. Bake at 375 degrees for 8-10 minutes.
Cream Cheese Layer
Beat cream cheese and sugar until smooth. Fold in Cool Whip.
Mango Layer: In a bowl, blend sugar, starch, and spices. In an overn safe pot, put the remaining ingredients and stir until blended. When it begins to boil, cook for one minute or until well thickened, Slowly mix in the sugar mixture. Bake covered pot at 350 degrees. At 30 minutes, check the mixture to check to see if it has thickened and the fruit has softened. If not done, stir and cover. Repeat every five minutes until the fruit is soft and the liquids have thickened. Remove from oven and cool to room temperature. Refrigerate and chill.
Assemble Pie: Use a 1/3 to ½ of the cream cheese mixture (depending on your pie size) and spread it on the crust bottom.
Spread a thin layer of the “topping” on the cream cheese layer. If the pan is deep enough, you can add a thin later of mango, but it is optional.
Top with another 1/3 or ½ of the cream cheese.
Top with Mango.
Top pie with whipped cream pattern of your choice. Place in fridge.
Before serving, top pie with a layer of the crunchy “topping”.
Whipped Cream
Heat one cup of cream and the white chocolate until chocolate is melted. Cool and chill overnight.
Whip one cup of cream to soft peaks, add white chocolate, and beat until stiff peaks. Top Pie.
