Ingredients
Crust
3 c Golden sandwich cookies, crushed
½ c butter, melted
2-3 Tbl sugar
Filling
1 tablespoon cornstarch
1/2 cup cold water
1/2 cup strawberry preserves
4 cups Fresh strawberries
2 bricks cream cheese softened
1 tea vanilla
½ cup sugar
Directions
Crust
Crush cookies in food processor, grinding into crumbs. Transfer crumbs to lg mixing bowl, add butter and sugar, toss with fork. Pour into pie dish and press into bottom and up sides. Bake for 15 mins. Let cool.
Filling
In mixing bowl, combine cream cheese, vanilla, and sugar. Beat till fluffy and well combined. Spread in the bottom of cookie crust.
Wash and stem strawberries. Arrange berries on cheese layer.
In a saucepan, combine cornstarch and water until smooth. Stir in preserves. Bring to a boil; cook and stir for 2 minutes or until thickened. Allow to cool. Spoon or brush over the strawberries. Refrigerate for 2 hours Garnish with Whipped cream.
