Ingredients
Serves eight. 9-10 Pie Pan.

Crust:
1 1/4 C. Graham Cracker Crumbs
3 T Brown Sugar
5 T Coconut Oil or butter, Melted
1/2 C rolled oats
1/2 C Pecan pieces
1/2 t vanilla
Pinch salt
Lemon Layer:
2 cans sweetened condensed milk
1 c lemon juice
zest of half of a lemon
1 whole egg
3 egg yolks
Blueberry Layer:
3 1/2 C Frozen Blueberries
2 C Fresh Blueberries
3/4 C Sugar
1/3 C Water
1/4 C Corn Starch
1 T Lemon Juice
1 T Butter
Pinch Salt
White Chocolate Mousse
2 1/2 C Whipping Cream
4 oz. White Chocolate
Directions
Crust:
Place pecans and oats in food processor and pulse until small pieces. Mix all ingredients. Press mixture into pie pan. Bake at 375 degrees for 8-10 minutes.
Lemon Layer:
Combine. Pour into crust just half way up the side of the crust (may not use all of it), and bake at 350 from 15 minutes (until set).
Blueberry Layer:
Mix sugar, starch, and a pinch of salt in a pot. Add water and frozen blueberries and heat over medium high heat for 10 minutes while stirring gently. Turn off stove and let rest for one hour. Stir mixture in the pot and place it back on medium heat until it boils and thickens. Add food coloring and remove from heat. Mix in butter and lemon juice. Fold in fresh berries and allow mixture to cool.
Spread cooled mixture on lemon layer.
White Chocolate Mousse
2 1/2 C Whipping Cream
4 oz. White Chocolate
Heat one cup cream and stir in white chocolate until melted. Refrigerate until cold. Whip the rest of the cream until stiff peaks form and add white chocolate mixture. Beat until stiff peaks. Spread on pie.
Decorate as desired, including topping with berries, lemon zest/slices, etc.
