Ingredients
Crust
2 cups flour
2/3 cups of shortening
1 1/2 teaspoons salt
1/4 cup ground cashews
5-7 tablespoons ice water
Filling
1 cup cashew butter, homemade is the best
3 eggs
1 cup brown sugar
1 tablespoon white vinegar
1/4 teaspoon salt
1/2 cup butter, melted
1 teaspoon vanilla
1 tablespoon flour
1 cup chopped cashews
Chocolate Ganache
1 cup semi sweet chocolate chips
1/2 cup heavy cream
Caramel
1 cup light brown sugar
1/2 cup butter
1/4 cup heavy cream
Dash vanilla
1/2 cup whole cashews
Directions
Crust
Place flour, shortening, flour, salt, cashews in food processor and turn on, pour in water and run until dough forms a rough ball. Roll out 1/2 of dough and place in 9″ pie pan. Chill.
Filling
Mix all ingredients well. Pour into chilled crust. Bake at 325 for 1 hour or until no longer wobbly in middle.
Chocolate Ganache
Melt chips and cream together and stir until smooth
Caramel
Cook all ingredients over medium heat into smooth. Cook for 3 minutes.
1/2 cup whole cashews
Cool pie and drizzle chocolate ganache and caramel over pie. Decorate with whole cashews.
