Caramel Pearadise Pie

Ingredients

2 pie doughs
5 c of 1/2” chunks of peeled pears (3 cans Del Monte) 1/2 c granulated sugar
4 tbs Clear-jel
1 tsp ground cinnamon
1/4 tsp ground ginger
1 tbs brandy
1 tbs lemon juice 1/2 c homemade caramel sauce
1/2 tsp Maldron salt
Egg white mixed with splash of water for wash Coarse sugar for sprinkling on crust
Pie dough ingredients” Ingredients
2 1/2 cups all-purpose unbleached flour
1 tsp salt
2 tbs sugar
1/8 tsp baking powder
12 tbs unsalted butter, cut into ½ inch pieces
1/2 cup Crisco
1/2 cup ice water (1/4 cup ice water, 1/4 cup vodka)

Directions

Prepare both doughs, placing one in a pie dish and the using the other to cut lattice strips. Cover with plastic wrap and refrigerate overnight or at least for a couple of hours.

Make the filling: Mix granulated sugar, Clear-jel, cinnamon, ginger, lemon juice and brandy together in a large bowl. Add the pears and stir to coat them with the previous mixture. Spoon the filling into the crust. Pour the caramel over the pear mixture and sprinkle the Maldron salt on top.

Arrange the lattice over the top of the pie. Lightly brush with egg wash and sprinkle with coarse sugar.

Place in freezer while over is preheating to 400 degrees. When oven is pre-heated place pie on baking sheet and cook for 20 minutes. Reduce oven to 350 and continue to bake for 40-45 minutes, covering the edges and the pie with loosely tented aluminum foil. Filling should be bubbling.

Allow the pie to cool for a 3 full hours or overnight before serving.

Instructions for pie dough:
Whisk the dry ingredients together in a metal bowl. Blend the butter into the dry ingredients, being careful not to overwork the mix. The butter should be in pea-size chunks, not too big, but not completely incorporated. Repeat with Crisco. Slowly add the ice-water mixture and bring the dough completely together by hand, so that it holds together when squeezed. Aim to create a marbleized effect, so that the butter/Crisco is still visible. Divide into 2 discs, wrap in plastic, and chill an hour or more before use. Can be done several days in advance.
