Banana Rum Caramel Pie

Ingredients

Crust
3 c Vanilla wafer cookies, crushed
½ c butter, melted
2-3 Tbl sugar

Filling
3 tablespoons cornstarch
1 2/3 cups heavy cream
1 (14 ounce) cans sweetened condensed milk
3 egg yolks
1 tablespoon butter
1 tablespoon vanilla extract
1 tea rum extract
3 Bananas Sliced
Dulce de leche
Cookie crust

Directions

Crust
Crush cookies in food processor, grinding into crumbs. Transfer crumbs to lg mixing bowl, add butter and sugar, toss with fork. Pour into pie dish and press into bottom and up sides. Bake for 15 mins. Let cool.

Filling
Smoothe ½ Dulce De Leche, then on top of dulce place ½ of sliced bananas into Bottom of pie crust.
Beat cornstarch and cream in heavy saucepan until cornstarch is dissolved.
Stir in sweetened condensed milk and egg yolks.
Continue stirring until thick and bubbly.
Remove from heat and stir in butter, rum extract and vanilla
Pour ½ custard into crust, repeat step 1 and top with remaining custard and chill for two hours or more.
Garnish with Whipped cream and caramel
Refrigerate leftovers.
