Almafi Limoncello Berry Cream Pie

Ingredients

Crust:

1 cup graham cracker crumbs

1/4 cup walnuts

6 tablespoons unsalted butter

In a mixing bowl, combine all ingredients, mix well and press into pie dish. Bake for 5-7 minutes, the crust will brown slightly.

Glace:

1 cup blueberries

1 cup blackberries

1 cup strawberries

1 cup raspberries

2 cups sugar

2 cups light corn syrup

3/4 cup cornstarch

1 3/4 cups water

Combine in a saucepan and cook well, stirring occasionally. The mixture will need to simmer for several minutes, until thick. Cool and refrigerate for several hours.

Filling:

1 pound Mascarpone cheese

1 vanilla bean

2 teaspoons lemon zest

1/4 cup limoncello liquor

2 tablespoons lemon juice

Whipped cream:

1 cup heavy whipping cream

1 teaspoon vanilla

1/4 cup powdered sugar

Whip on high speed with electric mixer.

Directions

In a mixer on medium high speed beat the mascarpone, add the vanilla bean seeds, and lemon zest, mix. Add the lemon juice and limoncello to taste. You may use more or less lemon juice depending on the strength of the fruit.

To assemble the pie, layer the bottom of the graham cracker crust with approximately 1/2 the glace. Add the mascarpone filling. Top with the remaining glace. Decorate with whipped cream and berries.
