Pop Goes the Corn Butterscotch pie

Ingredients

Crust Ingredients:

3/4 cup shortening

2 1/4 cups flour

3/4 tsp salt

3/4 cup ice water

Filling Ingredients:

1/2 cup butter

1 cup brown sugar

1/2 cup light corn syrup

4 eggs

3 tablespoons cornstarch

1 cup heavy cream

2 teaspoons vanilla extract

2 cups corn pops cereal

3/4 cup toffee bits

Directions

Preheat oven to 425 degrees

Combine shortening, flour and salt until course crumbs. Add the water 2 tablespoons at a time until dough combines into a ball. Roll out on a floured surface. Place in pie dish. Place a piece of parchment paper and pie weights in crust and bake for 20-30 miountes or untol crust is completely baked. Cover edges with foil if needed to prevent burning. Remove fcrom oven and set aside. Reduce oven to 350 degrees.

in a mixing bowl, melt the butter, and add the rest of the filling ingredients and combine until completely mixed. Stir in the corn pops. Pour this into pie crust. Cover in foil and bake for 1 hour. Top with toffee bits.
